Because I’m lazy and have a stand mixer, I just use the paddle attachment to mix and knead the dough for a minute or two. If you don’t have two hands, the next best thing is to hold the bowl with one hand and mix the dough with the other.It needs to be kneaded for a minute or two on the counter top until it becomes soft and smooth. REST: After mixing, the dough’s gluten is activated, allowing it to bounce back when rolled. Forming it into flat disks and letting it rest for 30 minutes will make it much simpler to roll out.
ROLL: You can either heat the pan and slap each tortilla on the pan as soon as you roll it, or you can roll out all of the tortillas at once and cook them. If you have help, you can split the work of rolling and cooking tortillas between two people.
